This is tough to not want to just pick Licensed titles.
I - Iron Maiden (Stern 1981)
J - Junk Yard (Williams Electronics 1996) or as super long shots Joust or Judge Dredd.
K - King of Diamonds (Gottlieb 1967) or Kingpin (Capcom 1996)
L - Laser War (Data East 1987) First machine from this manufacturer. First pinball machine from any manufacturer to feature stereo sound and 2.1 channel (stereo plus subwoofer) sound.
O - Orbiter 1 (Stern 1982), or go down under with Orbit 1 (A. Hankin & Company 1978)
P - Pinball Magic (Capcom 1995)
Q - Quicksilver (Stern 1980) "It Ain't Just Any Plain Old Silver Ball.It's the Fastest Moving Pinball Ever!"
U - Upper Deck (Williams 1973) Last electromechanical baseball game by Williams
V - Viper (Stern 1981)
W - Whirlwind/White Water/Who Dunnit/World Cup '94 are the obvious ones, but we need something to compete with Genie for annoying sound award. So I offer Wizard (Bally 1974) and Wild Card (Williams 1977)
X - Xenon (Bally 1979) or X's and O's (Bally 1984)
Y - Yukon (Williams 1971)
Z - Zip-A-Doo (Bally 1969) Theme: Happiness - Flower Power
