On install the app tries to connect to a server that is no longer in existence. so no entitlements, no nothing.

There is no way that the PAPA Fish Tales is bouncier than the FX3 one. Just look at the plunge at ~2:12 Bowen tries to catch it but it bounces and the ball does not go higher than the sling. Do the same in FX3 in single player classic arcade or tournament and the ball will clear the sling...
Some receivers will have video mode settings as well that might apply enhancements, or maybe you need to run through a PC HDMi in, or rename it to PC. It'll depend on the manufacturer.

DX11 doesn't respect table music settings. First game started from table selection screen will always have table music playing even though it is disabled in options.

OTOH i'd suggest that you check your graphics manager thing for the discreet GPU and make sure that FX3 is being opened with the discrete GPU and not the integrated. Not sure which model you have, but all of them appear to have discrete graphics.
Turn Anti Aliasing OFF, set shadows to LOW and see if the audio improves. It seems to be tied the the GPU performance.
Once you have it playing right you can raise the settings until you find where it glitches out.
Another thing to watch for with FX3 and the Bally/Williams beta is the beta is much more resource intensive than the regular branch. So you might need to lower the graphics settings to maintain 60 FPS. You'll know if you're getting bad performance even if hitting 60 FPS as the audio will sound...
