If the developer does not hold the release back (i.e. set's it's own release day), the game is moved to the app store as soon as it was approved by an apple employee... The moving normally takes about 10 minutes. So, a release can be available whenever it was approved...
I like the idea too. However, I don't think it is very easy to record high quality Videos from The Pinball Arcade. On the Mac it might be possible to use a screen capture software, but capturing from the iOS, or XBox/PS3 seems to be a lot more complicated...
