If you want to stay at 6.x.x and want to restore the device, you can do so on the iPad itself under: Settings/General/Reset/Erase All Content and Settings. This will *keep the currently installed iOS version at the same version* but will of course wipe the device clean. If you try to restore as new from the PC, I believe the newest iOS 7 will be installed on the device during the restore process. Also note if you do this type of reset, you need to remove any & all passcodes (Passcode Lock and Restrictions Passcode) before doing so. I've found a way to disable/remove the download if one feels brave enough to restore as a new device. 1. Backup ALL apps/music/data and make note of all your settings 2. Use "Erase All Content and Settings" on the device, as above, wiping it clean 3. Setup the device normally. 4. Important: turn off WiFi on the device after the device has activated and you have access to Settings 5. Important: When you connect the device to the PC, *disable the internet on the syncing PC* 6. Reinstall all of your Apps/music/etc. with the *internet turned OFF* and with Wi-Fi OFF on the device. The installation of this "courtesy update" is caused mainly by the syncing PC, downloading the update, then transferring the update to the device. I've been through this reset numerous through testing the last few days and by the time I was done setting up apps/music/etc, the file was downloaded/transferred to the device! Seems the only way to prevent this now is to keep both the PC and the device offline while syncing. This may cause issues for those who need the PC online while syncing. In my case, I have to remember to disconnect the PC from Wi-Fi until syncing is done. All my (updated and new) apps will be pre-downloaded, then transferred/synced while the PC is offline. Note, having the iDevice connected to the internet normally is fine. The "courtesy" iOS7 download will NOT be downloaded/transferred to the device *unless the syncing PC is connected to the internet and the iDevice is connected to that PC* Man, what a HUGE load of crap Apple has created for us...
