Question about Pinball.org tut vids

It's probably a dumb question, but I can't figure out why the player on this video sometimes just uses only his right hand to control both flippers.
When I first saw it I thought maybe he only had one arm, but then you see his other hand.. So ??

Yeah? Well he's a much better player than I'll ever be, but it would be a more impressive showing off if he didn't keep losing the ball during it.

Huh, I just found out he's a mathematics teacher by trade. That makes a lot of sense. I'd bet he's a good one.
