Original High Speed or Black Knight 2000 would be my first choices, but yes, slipping in one of the more sought-after EM tables this season would be welcome.
There are a lot of us that want it, and FarSight knows that a lot of us want it, and FarSight is reasonably sensitive to expressed demand for certain tables. So, it's likely they will make it for The Pinball Arcade sooner or later, but nothing is confirmed from them that they'll make it at all.
I do hope F-14 Tomcat and Red & Ted's Roadshow do end up getting considered (and built) in Season 4 if not soon enough for Season 3.

How about a mountain climbing theme? You could tour the worlds mountains (from easiest to hardest). Avalanche multi-ball. You could lock balls in a big carabiner toy. You could even collect an edelweiss for your love interest back down in the valley.

You're right that High Speed I & II are more similar than Black Knight and Black Knight 2000. That makes the imperative to release the first table all the more important.
That would make sense as FarSight would probably make more money off of both High Speed tables combined if they released the first one first (assuming they'll eventually release both at all). Lots of people bought and enjoyed Black Knight, but I would think fewer would have had Black Knight...
Antiquing/Collecting. It's quite popular these days from Antiques Roadshow to American Pickers to Storage Wars and the rest of the reality TV nonsense. Plus, it's a natural for pinball. You collect things via tons of different shots, targets, combos, etc.
