The trophy limit is for all PS3 games and Sony won't do an exception. With season 3 FS should get another 1200 points or so. They could make the Standard Goals Bronze trophies and use some points for the season 2 tables.

I usally do the same kind of decision making, shutyertrap, looking at the complexity, speed, difficulty and playtime. Long games have a tendency to become boring so the theme of a table is very important.

I think we can't blame the textures. Just look at the iPad version if you have the chance, everything is readable and crystal clear. It must be the rendering technology that turns the high quality models and textures into a blurry mess when you play in a zoomed out table view.
Flight 2000 is a cool table. My only complaint is that sometimes it's too happy to play with itself (bumper, slingshot, bumper, slingshot, ...). Reaching Multiball on a real table must be pretty hard!

Oh no, don't turn off the lighting. You don't want that, believe me, even if it means that we have to live with the input lag. For some tables it doesn't matter so much but others like MM, ST:TNG or CV will look a lot worse.
