Sadly, I think we're doomed to be disappointed on this front. Game Center allows each game a maximum of 25 leaderboards. Pinball has 22 tables and counting, so after the next couple of table-pack releases it simply won't be possible for them to have a separate leaderboard for each table. :(

Whilst I don't want to rubbish what sounds like a nice idea, I think you're underestimating how difficult a job that would be. (For comparision, just look at how much trouble FarSight have had with the (much simpler) Facebook-based leaderboards.)
