I hate Stern

Williams/Bally had so many great multiball starts I can't count them all. That is absolutely something I miss when playing Stern. That also goes for the sense of accomplishment when getting those jackpots. Well spotted on that

Just for the fun of it, Here is how I rank the 5 WMS/Bally machines I own myself(so many other great ones but that list would be to long) by multiball starts.

Nr. 1: Twilight Zone (not many that can match the "Don't touch the door" voice going crazy)
Nr. 2: The Shadow (That evil laugh gets me joining in every time. Classic)
Nr. 3: WHIIITE WAAATEER
Nr. 4: Indiana Jones (A very good dmd screen followed by that short POUTT but when you hear the elephant horn blowing you better stay on your toes)
Nr. 5: Medieval Madness: Last place here. A nice victorious fanfare, but not that special to be honest.

You are so lucky to have those tables. That is pretty much an unbeatable set of picks!
In regards to great starts, don't forget Cirqus Voltaire. People die in that multiball! Attack From Mars, Monster Bash and BS Dracula are excellent as well.
