It seems unlikely that they'd go to the extra effort to get the Pinball 2000 platform working just for one or two tables, which are themselves not tremendously well-loved.

Well, I clicked Black Knight 2000 in about a quarter of a second. The other choices were slightly harder.
I voted for Fire! just because it's one of two real tables on which my daughter has thrashed me (the other, I am ashamed/proud to say, was Star Trek: TNG, about a week ago).
I've played a majority of them, partly because I played some pinball back in the Nineties, but mostly because I'm fortunate enough to live near the aforementioned Pinball Wizard. Some didn't grab me in RL and I haven't played them very many times.
