I solved my problem. I just got a Display Port cable and hooked that up to the monitor instead of the HDMI cable. Everything works fine now. Unfortunately, the intermittent slow-down is still present. But outside of that, the gameplay is smooth and the tables look fantastic.
Interesting. I haven't yet run into this particular issue, and I play on my iPad a lot (an iPad Pro with iOS 10). I usually keep my thumbs just to the side of each flipper. Do you have to be near the edge of the screen for this to be a problem?

One other change I've noticed: all games default to 3 balls per table when launching Zaccaria, every time, even if you reset the master slider to 5 balls. When you re-launch the game, all tables revert back to 3 balls.
